Most BCH wallets show a CashAddr address that starts with bitcoincash:q, or just q when the prefix is hidden. Some wallets can also display an older legacy format starting with 1, which looks like a Bitcoin address. Copy the address straight from your BCH wallet so you do not mix it up with BTC.
Not unless that wallet also supports Bitcoin Cash as a separate coin. BTC and BCH share early history but run on different chains, so a bc1 Bitcoin address cannot take a BCH payout. Use the BCH receive address from a wallet that lists Bitcoin Cash.
BCH payouts never use a memo or tag, because the address alone identifies the recipient, as with Bitcoin. If you send to an exchange, use the BCH deposit address it shows for your account on the Bitcoin Cash network.
Speed depends mostly on your ETH deposit and how busy Ethereum is when you send it. Once the BCH payout goes out, it can sit as unconfirmed in your wallet until a miner includes it, and Bitcoin Cash targets about one block every 10 minutes. The order page shows the live stage.
