A memo is needed when the Stellar address belongs to an exchange or another service that pools customer funds, since the memo identifies your account there. For a personal wallet where you hold the keys, you can usually leave it blank. When unsure, check the deposit screen of the service you use.
A Stellar public address is 56 characters and starts with the letter G. Your wallet may also show a secret key starting with S, which you must never share or paste anywhere. Only the G address goes into the receiving field.
Stellar requires every account to keep a minimum XLM balance, set by the network's base reserve, and an address does not exist on the ledger until it is funded with at least that amount. The first payment into a new address has to cover the minimum. The reserved XLM cannot be spent while the account stays open.
The ETH deposit is usually the longest step, since it needs block confirmations on Ethereum before the exchange starts. After that, Stellar closes ledgers every few seconds, so the payout lands soon after it is sent. The order page updates as each stage finishes.
