Any Ethereum 0x address you hold the keys for will do, from MetaMask, Rabby, a hardware wallet or similar. Make sure the wallet is set to Ethereum mainnet when you check for the funds. An address copied from an exchange should be one it lists for ETH on Ethereum.
The estimate subtracts the mainnet gas needed to send your ETH, and gas prices climb when Ethereum is congested. That cost comes out of the payout, so busy periods mean a smaller figure. A floating rate also means the market can nudge the result before your Monero confirms.
